Anzac Biscuits

Ingredients: 

1 cup flour
1 cup white sugar
1-3/4 cups coconut (coarsely shredded coconut is great for texture)
1-1/2 cups rolled oats
1/4 cup chopped walnuts
100g butter
2 tablespoons golden syrup (corn syrup)
1 teaspoon baking soda
2 tablespoons boiling water

Preheat oven to 160C (325F). Mix flour, sugar, coconut, rolled oats and walnuts in a bowl. Melt butter and golden syrup together. Mix baking soda with boiling water to dissolve. Mix both butter and baking soda mixtures together in a large bowl. Add flour mixture and combine. Roll teaspoonfuls into small balls. Place on a well greased or baking paper lined oven tray and press flat with the back of a spoon. Allow room for biscuits to spread.Bake for 25 to 30 minutes. Cool on a wire rack and store in an airtight container. Makes 40 biscuits.

Notes:
These are traditional anzac day cookies with a long history. I find that putting the dough in the freezer for about 15 minutes before you try to roll into balls helps immensely.
