Mama's Meatloaf

Ingredients: 
  • 2 lbs. ground beef
  • 1 and 1/2 cup cracker crumbs (I use 1 c. Ritz & 1/2 c. saltine)
  • 2 eggs
  • 3/4 cup water (I use 1/2 c. water and 1/4 c. vegetable broth)
  • 1/3 cup of ketchup
  • 2 T. prepared mustard
  • 2 celery stalks, chopped
  • 1 medium onion, chopped
  • 1/4 bell pepper, chopped
  • seasoning salt
  • 3 dashes black pepper

Topping:

  • 3/4 c. ketchup
  • 1/4 c. prepared mustard
  • 1/4 c. brown sugar

Mix the first 6 ingredients in a large bowl. Season generously with seasoning salt (I use a season all and Tony's Creole). Add in 3 dashes of black pepper. Add the chopped vegetables and mix well. Spread into a caserole dish. In a separate bowl, mix the topping ingredients. Spread on top of the loaf. Bake uncovered at 350 degrees for 1 hour.
