Three Bean Salad

Ingredients: 
  • 1 can green beans, drained
  • 1 can yellow beans, rinsed and drained
  • 1 can red kidney beans, rinsed and drained
  • 1 medium purple onion, sliced thin
  • 1/4 bell pepper, chopped
  • 2 celery stalks, chopped
  • 1/2 cup cider vinegar
  • 1/3 cup extra virgin olive oil
  • 1/2 cup granulated sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper

Mix together all beans, onion, celery, and bell pepper. In a separate bowl wisk together vinegar, oil, sugar, salt, and pepper. Pour over the vegetable and bean mixture. Let marinate in the refrigerator for at least 4 hours. Stir 2 times while it's marinating.
