Spicy Asian Shrimp and Broccoli Pasta

Ingredients: 
  • 8 oz. vermicelli noodles, broken
  • 2 tsp. sesame seed oil
  • 1 lb shrimp, shelled and deveined
  • 1/2 tsp. ginger
  • 3 garlic cloves, fine chopped
  • 2 c. fresh broccoli florets
  • 1/2 c. fresh match stick carrots
  • 1 chile pepper, seeded and chopped fine
  • 1 green onion
  • 3/4 c. chicken broth
  • 1 T. soy sauce
  • 1 and 1/2 tsp. cornstarch
  • 2 tsp. finely chopped fresh parsley

Cook noodles as directed on package. Drain and cover to keep warm. Put sesame seed oil in wok or large skillet. Heat over high heat until hot. Add shrimp. Cook while stirring for about 4 minutes. Remove shrimp and set aside. Add ginger and garlic to pan; cook just 30 sec. Add broccoli, carrots, pepper, and green onion. Cook for 3 minutes while stirring. In a bowl, combine broth, soy sauce, and cornstarch. Add this mixture to the pan, along with the shrimp. Cook and stir for a couple of minutes until sauce starts to thicken and shrimp are pink. Stir in parsley. Simmer for a minute. Serve over noodles.
