Spinach Rice Balls

Ingredients: 
  • 2 c. steamed rice
  • 1 pkg. frozen chopped spinach, thawed and drained
  • 2/3 c. bread crumbs
  • 1/2 c. parmesan cheese, grated
  • 1/3 c. onion, minced
  • 3 egg whites, beaten
  • 1/4 c. skim milk
  • 1 T. spicy mustard
  • cooking spray

Mix rice, spinach, half of the bread crumbs, cheese, onion, egg whites, milk, and mustard. Shape into 1" balls. Roll the balls in the remaining bread crumbs. Place on greased cookie sheet. Bake at 375 degrees for 10-15 minutes.
