Jello Cookies

Ingredients: 
  • 3/4 shortening
  • 1/2 c. sugar
  • 1 pkg. jello, any flavor
  • 2 eggs
  • 1 tsp. vanilla
  • 2 and 1/2 c. flour
  • 1 tsp. baking powder
  • 1 tsp. salt

Mix ingredients in order listed. Shape into balls. Flatten with a glass dipped in sugar onto greased cookie sheet. Bake at 350 degrees for 8 to 10 minutes.

These sound interesting. I wonder how butterscotch jello would taste in these... hrmmm or lemon... mmm

Experiment with Different Jello Flavors

My favorite jello to use with this recipe is peach, just because I like the flavor. Peach jello makes a very mild, not to sweet, tasting cookie that is a pale peachy color.  You can use your favorite flavor of jello when making these cookies, or choose a flavor that will make the color cookie you desire.

These are Great for Christmas

I especially love to make these at Christmas. I make 2 batches, one with cherry jello and one with lime jello. That way I have red and green cookies.
