Fresh Fruit Dip

Ingredients: 
  • 2 c. sour cream
  • 2 T. brown sugar
  • 1 T. orange juice
  • 1 T. grated orange peel

Mix all ingredients and chill for at least 2 hours before serving. Serve with fresh fruit.

Buttermilk Dip

Ingredients: 
  • 1 c. sour cream
  • 1 garlic clove, crushed and chopped
  • 1/3 c. instant dry buttermilk
  • 1/2 tsp. dill weed
  • 1/4 tsp. salt

Mix all ingredients and chill for at least 2 hours before serving. Goes great with fresh fruit.

Spinach Rice Balls

Ingredients: 
  • 2 c. steamed rice
  • 1 pkg. frozen chopped spinach, thawed and drained
  • 2/3 c. bread crumbs
  • 1/2 c. parmesan cheese, grated
  • 1/3 c. onion, minced
  • 3 egg whites, beaten
  • 1/4 c. skim milk
  • 1 T. spicy mustard
  • cooking spray

Mix rice, spinach, half of the bread crumbs, cheese, onion, egg whites, milk, and mustard. Shape into 1" balls. Roll the balls in the remaining bread crumbs. Place on greased cookie sheet.

Piggy Dogs

Ingredients: 
  • 1 lb. bacon
  • 1 pack beef hot dogs
  • brown sugar
  • toothpicks

Cut the pound of bacon in half, so the strips are shorter. Cut the hot dogs in half. Wrap the bacon around the hot dogs and keep in place with toothpicks.

Black Eye Pea Dip

Ingredients: 
  • 1 stick butter
  • 2 cans black-eye peas
  • 1 small can green chiles
  • 1/2 onion chopped
  • 1 garlic clove
  • 1 jar Old English cheese

Saute onion and garlic in the butter. Mash the black-eye peas, then add peas, green chiles, and cheese to the skillet. Heat until the cheese melts and serve.
