Flax Bran Muffins

Ingredients: 

1/2 cup unprocessed wheat bran
1/2 cup boiling water
1 cup prune juice
1/4 cup molasses
2 tablespoons light olive oil or hazelnut oil
1 large egg
1/2 cup golden flaxseed
3/4 cup whole wheat flour
1 teaspoon cinnamon
1 teaspoon ground ginger
1 teaspoon baking soda
1/8 teaspoon salt
1/3 cup raisins

Preheat oven to 400 degrees.

1. Place wheat bran in large bowl and add boiling water. Stir to combine and set aside.

Sausage Loaf

Ingredients: 
  • 1 & 1/2 lbs (or 3 c.) ground sausage
  • 2 c. bread crumbs
  • 1/2 tsp. salt
  • 2 c. raw potato
  • 1 med. onion

Put bread, potato and onion through food processor consecutively. Mix with sausage and salt. Bake in loaf pan at 375 degrees for 1 and 1/2 hours.

Easy Pancakes

Ingredients: 
  • 1 c. flour
  • 1 c. milk
  • 2 T. sugar
  • 1 egg
  • 1/2 tsp. salt
  • 2 tsp. baking powder

Mix well. Cook in hot skillet with a little shortening or vegetable oil. Brown on both sides.
